YUCCA FRIES

3 yucca roots (6-8" long is average)
2 tablespoons of duck fat, lard, tallow or whatever fat you like
salt & pepper to taste

Preheat the oven to 400.  Bring about 3 quarts of water to a boil.  Peel the yucca with a sharp knife and cut it into fries (I cut each one in half and then usually cut each half into thirds).  You want these fries to be THICK -- they will be too hard to chew and pretty much burnt if they're too thin.  Boil the fries for 11 minutes, then drain them and put them on a baking sheet.  Pour the duck fat (or whatever fat you have chosen) over them and sprinkle them with salt and pepper.  Toss to combine.  Bake for 30 minutes, flipping the fries over halfway through.  Fries will be golden brown when they are done.
