SUSIE'S SUMMER SALAD

¼ - ½ cup finely diced red onion
1 15 oz can of black beans, drained and rinsed
1 ½  cups corn, cooked (cook & remove kernels from 2 large ears of corn)
2 Tb fresh cilantro, chopped
2 avocados, chopped into cubes
2 cloves of garlic, minced
1/3 cup freshly squeezed lime juice (from 2 small limes)
Zest from one lime
1/4 cup olive oil
Salt and pepper to taste

Combine all ingredients in a large bowl and toss to serve.
