I will admit that I was new to celery root before trying this soup -- but I am now a loyal fan.  I got the recipe from Christopher James Clark's website (I just leave out the fancy accoutrements that he garnishes his with because I make it so often that I just want it to be quick and don't care about fanciness).  His website is loaded with amazing, EASY, healthy recipes.  Check it out with the above link.

1 celery root, peeled and chopped
1 Yukon gold potato (or white potato -- whatever you like), peeled and chopped
1 can coconut milk
1-inch piece of ginger
1 tsp salt

Dump all ingredients into a large pot.    Add just enough water to cover everything.  Bring to a boil, then reduce heat and simmer for 30 minutes.  Puree with an immersion blender or in a blender.  Serve immediately or store in mason jars in the fridge!
