CARAMELIZED BUTTERNUT SQUASH WITH TURMERIC

Typically, the only way I can get butternut squash in my diet is in soup (my favorite recipe is on the recipe page of this site!).  BUT, I have recently discovered that if it is caramelized, it is much more tasty.  Maybe this is not news to many of you (or maybe you even like it un-caramelized), but I thought this discovery was very exciting!  Try!

1 butternut squash, peeled and chopped into 1" chunks
2 Tbsp coconut oil
1 tsp turmeric
1/2 tsp salt

Toss all of the ingredients together on a baking sheet.  Bake at 400 degrees for about 15-20 minutes, or until caramelized.  Even slightly burnt still tastes yummy.
